Grits are a staple in a southern home. They are very versatile. from plain to cheese to cakes and my husbands favorite tomato grits. I've even seen a few in Florida eat them like cream of wheat with milk and sugar. 

There is a secret to making perfect grits.
2 cups water                                            1/3 cup quick grits
1/2-1 tsp of salt                                      fresh ground pepper
butter

Place water in a small pot and bring water to a boil. Sprinkle grits into boiling water and stir immediately until combined and no lumps. Sprinkle salt & pepper to taste.  You will cook them for about 20 minutes. THEN and only then add your butter at the end. Then you can serve as one of the above pictures with sausage that has been skillet sauteed with caramelize onions with drippings.

Peanut Butter Marshmallow Toast

I started baby sitting when I was 13, Loved it!! My parents would drive me to the parents home until I could drive at 15. When I could drive I would go to theirs houses in the summer and keep the kids while they were out of school. I would have to be there early to fix breakfast. One day I get there and there is the smell of peanut butter in the air. Their Mom had gotten up early and fixed Peanut Butter Marshmallow toast. I had never heard of it before that time. Our Mom never really bought peanut butter. (I think she didnt buy it because she had to eat it a lot when she was a kid because they were poor. "No kid of mine" type of feeling she had towards it.) So the kids set up at the bar and show me how to fix them. And here is the VERY hard recipe.

2 slices bread
couple tablespoons peanut butter
marshmallows

Spread peanut butter onto slices. If you you use mini marshmallow just scatter them whole over the bread. If regular ones use scissors to cut into 3 pieces. Place these on top of the peanut butter and place on a cookie sheet and place in toaster over on broil. Watch closely as they can burn easily and cook until tops are golden. Serve warm.

Crock-Pot Oatmeal

This recipe is adapted Alton Browns recipe on Food Network.  http://www.foodnetwork.com/recipes/alton-brown/overnight-oatmeal-recipe/reviews/index.html.
I have been trying to help my husband get healthier by eating oatmeal. I found that the quick oats where giving me stomach cramps and my cousin told me to switch to Steel Cut Oats. John even liked the texture and taste of these better.  I have tried to get up in time to fix him oatmeal before he goes to work. I have not had much success in waking up when he does.  I seem to wake up just as he is leaving most times.  So when I saw this recipes I said to myself this is the answer to my dilemma.

Ingredients
2 cups water
1/2 cup steel cut oats
1/4 cup dried cranberries or any dried fruit
1/4 cup heavy cream
Honey, Brown Sugar, Cinnamon, Sugar, Milk or Half & Half

Place first four ingredients in 2 qt crockpot. Place on low and cook for at least 8 hours.

Make sure you use Steel Cut Oats. Steel Cut Oats are hardier. They hold up better to the long cooking time.
In the morning remove oats and add whatever "toppings" you prefer. Just note that dried fruit adds a little sugar to the oats. So tastes to measure how much you add.
